Grilled Pineapple Chicken Skewers (Printer-friendly)

Juicy chicken and pineapple grilled with peppers and onion, finished with a flavorful marinade.

# What You Need:

→ Protein & Produce

01 - 1 1/2 pounds boneless, skinless chicken breast, cut into 1-inch pieces
02 - 1 fresh pineapple, peeled, cored, and cut into 1-inch chunks
03 - 1 large red bell pepper, cut into 1-inch pieces
04 - 1 red onion, cut into 1-inch wedges

→ Marinade

05 - 1/4 cup soy sauce (use gluten-free as needed)
06 - 2 tablespoons olive oil
07 - 2 tablespoons honey
08 - 2 tablespoons fresh lime juice
09 - 2 cloves garlic, minced
10 - 1 teaspoon ground ginger
11 - 1/2 teaspoon black pepper

→ Garnish

12 - 2 tablespoons fresh cilantro, chopped
13 - Lime wedges, for serving

# How to Make It:

01 - In a medium mixing bowl, whisk together soy sauce, olive oil, honey, lime juice, minced garlic, ground ginger, and black pepper until fully combined.
02 - Place chicken pieces in a large zip-top bag or shallow dish. Pour half the marinade over the chicken, reserving the remainder for basting. Chill and marinate for at least 15 minutes or up to 2 hours for greater flavor infusion.
03 - Preheat the grill to medium-high heat.
04 - Thread marinated chicken, pineapple chunks, red bell pepper, and red onion pieces alternately onto skewers.
05 - Place assembled skewers on the grill and cook for 12 to 15 minutes, turning every 3 to 4 minutes. Baste with reserved marinade during grilling until chicken is cooked to an internal temperature of 165°F and has slight char marks.
06 - Remove skewers from heat. Garnish with chopped cilantro and serve immediately with lime wedges.

# Cooking Tips:

01 -
  • The marinade turns ordinary chicken into something you can’t stop nibbling straight off the grill.
  • This dish is so quick to assemble that you can spend more time catching up with friends than fussing in the kitchen.
02 -
  • If you skip soaking wooden skewers, they’ll blacken and break right alongside your patience.
  • Basting the skewers with extra marinade makes the pineapple even more irresistible — don’t forget!
03 -
  • If your grill is sticking, wipe the grates with a bit of oil before you begin.
  • Double up on pineapple if you want it super caramelized—grill extras beside your main skewers.
