Avocado BLT Grilled Cheese (Printer-friendly)

A decadent twist featuring crispy bacon, fresh lettuce and tomato, creamy avocado, and gooey melted cheese on golden buttery bread.

# What You Need:

→ Bread & Dairy

01 - 4 slices sourdough or country white bread
02 - 2 tablespoons unsalted butter, softened
03 - 4 slices cheddar or Monterey Jack cheese

→ Meats

04 - 4 slices thick-cut bacon

→ Vegetables

05 - 1 ripe avocado, sliced
06 - 1 medium tomato, sliced
07 - 2 leaves romaine or butter lettuce

→ Condiments & Seasoning

08 - Salt and freshly ground black pepper to taste

# How to Make It:

01 - Cook bacon slices in a skillet over medium heat until crispy, approximately 5-7 minutes. Transfer to paper towels to drain excess fat.
02 - Lightly butter one side of each bread slice with softened butter.
03 - Place two bread slices buttered side down on a work surface. Layer each with cheese, bacon, lettuce, tomato slices, and avocado. Season avocado and tomato with salt and pepper. Top with remaining cheese slices and bread slices with buttered side facing up.
04 - Heat a large nonstick skillet or griddle over medium-low heat. Place assembled sandwiches in the skillet and cook until golden brown with melted cheese, approximately 3-4 minutes per side. Apply gentle pressure with a spatula while cooking.
05 - Remove sandwiches from skillet and let rest for 1-2 minutes. Slice diagonally in half and serve immediately while warm.

# Cooking Tips:

01 -
  • It takes everything perfect about a BLT and wraps it in melted cheese and crispy, golden bread.
  • The creamy avocado cools down the richness and makes every bite feel indulgent but somehow still fresh.
  • You can make it start to finish in twenty minutes, even on a lazy Sunday when you don't want to think too hard.
  • It's messy in the best way, the kind of sandwich that demands napkins and no regrets.
02 -
  • If your heat is too high, the bread will toast before the cheese melts, leaving you with a gorgeous outside and a cold, sad inside.
  • Season the avocado and tomato directly, unseasoned vegetables taste flat and won't stand up to the bacon and cheese.
  • Softened butter is non-negotiable, cold butter tears the bread and leaves bare spots that won't brown evenly.
03 -
  • Press gently with the spatula as the sandwich cooks, it helps the layers meld together without squishing out all the good stuff.
  • Use a cast iron skillet if you have one, it holds heat evenly and gives you the most consistent golden crust.
  • If your avocado is too firm, let it sit on the counter for a day, a hard avocado has no business in this sandwich.
